Equipment

  • Hand mixer or stand mixer
  • Two mixing bowls
  • Rubber spatula
  • Shallow serving bowl

Ingredients

  • 8 oz cream cheese softened to room temperature
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 pinch salt
  • 1 cup heavy cream cold
  • 1/2 cup caramel sauce thick
  • 1/4 cup graham cracker crumbs
  • apple slices for serving
  • graham crackers for serving

Instructions

  • In a bowl, beat the softened cream cheese until completely smooth, about 1 minute.
  • Add the powdered sugar, vanilla extract, lemon juice, and salt. Beat until the mixture is smooth and creamy with no lumps.
  • In a separate bowl, whip the cold heavy cream until stiff peaks form. The cream should hold its shape when you lift the beaters.
  • Fold about a third of the whipped cream into the cream cheese mixture to loosen it, then fold in the remaining whipped cream until no streaks remain.
  • Spread the dip into a shallow serving bowl, smoothing the top.
  • Spoon the caramel sauce over the dip in loose lines, then drag a knife through it once or twice for a light swirl.
  • Sprinkle the graham cracker crumbs over the top.
  • Serve right away, or chill for 30 minutes for a slightly firmer dip. Serve with apple slices and graham crackers.

Notes

Soften the cream cheese completely, since cold cream cheese leaves lumps that won't beat out. Whip the cream to stiff peaks and fold it in gently rather than stirring, which keeps the dip light and airy. Add the caramel and graham cracker crumbs at the end so they stay on top instead of making the dip too sweet. Slice the apples close to serving time, or toss them lightly in lemon juice if prepping ahead. Cover and refrigerate for up to 3 days; stir lightly before serving again and add a fresh drizzle of caramel and crumbs if the originals have softened. Keep the apple slices separate until serving.
