- 1 package cream-filled chocolate sandwich cookies 14.3 oz, about 36 cookies
- 1 package cream cheese 8 oz, softened
- 12 oz semisweet chocolate melting wafers
- 2 oz white candy melts about 1/3 cup
- 36 mini candy eyes
Line a baking sheet with parchment paper.
Process the cookies, filling and all, into very fine crumbs. Add the cream cheese and process until the mixture forms a smooth dough with no white streaks.
Scoop level tablespoons of dough, roll into smooth balls, and place on the baking sheet. Chill for 30 minutes, until firm.
Melt the chocolate wafers in the microwave in 30-second bursts, stirring after each, until smooth.
Drop one chilled ball into the chocolate, turn it with a fork to coat, lift it out, and tap the fork on the bowl’s edge to shake off the excess. Slide it back onto the parchment. Work in batches and keep the remaining balls in the fridge.
While the coating is still wet, press two candy eyes onto each truffle.
Let the coating set, about 15 minutes in the refrigerator. Melt the white candy melts, scoop them into a zip-top bag, snip a tiny corner, and drizzle back and forth across each truffle in zigzag lines, leaving the eyes uncovered. Refrigerate 10 minutes to set.
Tips: Soften the cream cheese fully so the dough is smooth and holds together. Dip cold balls, because room-temperature balls soften in the warm chocolate and slip off the fork. Stir the melted chocolate often, and if it thickens while you work, warm it for 10 seconds.
Storage: Refrigerate in an airtight container, layered with parchment, for up to 1 week.
Make-ahead: The truffles can be fully finished a week ahead. You can also freeze decorated truffles in a single layer for up to 1 month. Thaw them in the refrigerator, still covered, before serving.
